RECIPE – Easy to Make Pineapple Upside Down Cake

Let’s enjoy the New Year with this scrumptious, divine Pineapple Upside Down Cake which I’ve perfected to be so good – they’ll keep coming back for more 🙂IMG_986192519002


  • 115g butter
  • 2/3 cup brown sugar
  • 3 cups fresh pineapple , peeled, cored and cut in to 1 inch chunk
  • 1 1/2 cups of all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 115g butter
  • 2/3 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 3/4 cup milk
  • Cherries- I would recommended the fresh cherries although they are bit expensive.


  1. Preheat oven 175°c. In a small bowl stir melted butter and brown sugar. And spread the mixture evenly in a well buttered pan.
  2. Pat the pineapples dry between several sheets of paper and arrange it evenly on top of the sugar and butter mixture.
  3. Cut the cherries in to two or you may place the whole cherry on the core of the pineapple slice.
  4. Sift flour, baking powder, cinnamon, salt.
  5. In a large mixing bowl cream the softened butter with sugar until light and fluffy.
  6. Add eggs one at a time, beating well after each addition.
  7. Stir in the vanilla.
  8. Add the flour mixture in 3 parts. Alternately with milk. Beginning and ending with flour.
  9. Beat well after each addition.
  10. Spread the batter evenly in to the prepared pan.
  11. Place the pan in the middle of the oven.
  12. Bake for 45-55 minutes.
