Recipe – Hummus

Hummus is an authentic middle eastern food dip or spread that 
has gained widespread popularity. 
It a is easy to make and has many varied versions. 
This is the version I like! Enjoy!!
  • One cup cooked chick peas
  • 4 tablespoons light tahini — please see the recipe for tahini paste
  • Juice of two lemons
  • 1/2 cup of olive oil
  • 3-4 garlic cloves
  • Salt to taste
  1. Put the cooked chick peas in a food processor or blender together with a 2/3 of the reserved cooking liquid.
  2. Add tahini, lemon juice, half of the oil and salt. Make sure you strain the lemon juice. If not you can add lemon juice last.
  3. Blend until smooth adding a little more liquid if it is thick.
  4. Leave to stand for an hour or so to let the flavours develop.
Serve with drizzled olive like on top.

You can refrigerate and use it for one to two weeks.

To make the Tahini paste
  • 1/2 a cup of sesame seeds
  • Olive oil
  1. Toast them. But not until they become brown.
  2. Add bit olive oil nd b,end 2 minutes.
  3. Add olive oil to be thick and pourable.
  4. Blend it till it become a creamy thick sauce like.

    oh…. I had this when I went UK last. As I’m a vegetarian my relations found it difficult to feed me and this was a great hit……! Love you for the recipe given.I get fed up by eating boiled chick peas all the time.Good for a starter too and mind you nourishing.Why not add the stems of celery to add more colour with carrots!I will try this next time I get chick peas.Thank you mumsibles….!
