8 Dec

by Mumsibles G

I think this is the perfect cookie to leave under the Christmas Tree for Santa!! Leave this and a mocha under the Christmas Tree and you are guaranteed top-notch gifts this year and through out!!!

Read on to get the recipe!

  • a wee bit over 3/4 cup of  margarine  at room temp
  • 1 cup brown sugar
  • 2 egg yolks
  • 1 tsp cinnamon (i think all Christmas Cookies need a bit of cinnamon!)
  • 1/2 cup chewy toffees (try to chop them up to spread them out more)
  • 1/2 cup apple chunks
  • 1 & 2/3 cups of self-raising flour
  • 2 tablespoons of milk

  1. Preheat the oven to 170C.
  2. Beat together the butter and sugar until creamy.
  3. Stir in the yolks, toffee, cinnamon, apple and flour. Make balls with the dough.
  4. Place the balls on cookie sheets and flatten with your hand to form a round cookie shape. Make sure they are about an inch a part, or else they kinda form one huge cookie.
  5. Brush with milk and bake for 8-12 minutes until golden.

Warning!!!!! Make loads, or else there won’t be any left for Santa!!! They are too yum to keep around.

So enjoy, I’m off to make my second batch – the first just didn’t wait for Santa 🙂

Till Next Time!
